Enchiladas

This is an old favorite.
My niece taught me how to make
these enchiladas soon after
B and I got married
.

You Need These Things:
(plus cheese,chicken,&oil)
I used a rotisserie chicken
but
usually I cook
frozen chicken tenders


Mix sour cream, rotel,
onion powder,
and cream of chicken.

Cook the corn tortillas in
oil for a few seconds
on each side to soften them


Place them on a paper towel
to soak up the remaining oil


Tear into fourths and
place in a 9 by 13 baking dish

Layer tortillas/chicken/
sour cream mixture/ cheese
Repeat

Cook
